Ghostly Halloween Caprese Salad

- 1 pint cherry tomatoes (or grape tomatoes)
- 1 package (8 oz) fresh mozzarella balls (mini mozzarella balls or bocconcini)
- Fresh basil leaves (for garnish)
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic glaze (for drizzling)
- Salt and pepper to taste
- Black olives (sliced, for ghost eyes)
- Prepare the Mozzarella Ghosts:
- Gently pat the mozzarella balls dry with paper towels. If they are not already bite-sized, you can cut them into smaller pieces.
- Assemble the Ghosts:
- Arrange the mozzarella balls on a serving platter. Use a small knife or toothpick to create ghostly shapes. You can do this by slightly flattening one side of each mozzarella ball and using a small piece of black olive to create eyes.
- Add the Tomatoes:
- Place cherry tomatoes around the mozzarella ghosts on the platter. These will act as “pumpkin” accents to complement the ghostly figures.
- Garnish and Season:
- Tuck fresh basil leaves in between the ghosts and tomatoes for a touch of green.
- Drizzle the extra virgin olive oil and balsamic glaze over the entire platter.
- Season with salt and pepper to taste.
- Serve:
- Serve immediately or refrigerate until ready to enjoy. This salad is best enjoyed fresh.
