For the Cookie Cake:

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (or your favorite mix-ins)

For the Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Food coloring (green, purple, or any spooky colors)
  • Halloween sprinkles or edible decorations (eyeballs, ghosts, etc.)

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 12-inch round cake pan or line it with parchment paper.
  • Make the Cookie Dough:
    • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs and vanilla extract, mixing until well combined.
    • In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
  • Bake the Cookie Cake:
    • Spread the cookie dough evenly into the prepared cake pan.
    • Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean. Allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  • Make the Frosting:
    • In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar and mix until well combined.
    • Add the heavy cream and vanilla extract, and beat on high speed for about 2-3 minutes until fluffy. Divide the frosting into separate bowls and color them with food coloring as desired.
  • Decorate the Cookie Cake:
    • Once the cookie cake is completely cool, spread a layer of frosting on top. Use different colors to create spooky designs.
    • Top with Halloween sprinkles, edible decorations, and any other ghoulish toppings you like.
  • Serve:
    • Slice the cookie cake into wedges and serve at your Halloween party!
