For the Tarts:

  • 1 sheet of puff pastry, thawed
  • 6 oz goat cheese, softened
  • 6 fresh figs, sliced (or 1/2 cup fig preserves)
  • 1 tablespoon honey (optional)
  • Fresh thyme leaves (for garnish)
  • Salt and pepper to taste

For the Egg Wash:

  • 1 egg, beaten
  • 1 tablespoon water

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2: Prepare the Puff Pastry

  • On a lightly floured surface, roll out the thawed puff pastry to smooth out any creases. Cut it into 12 equal squares or circles, depending on your preference.

Step 3: Assemble the Tarts

  • Place the pastry squares or circles on the prepared baking sheet. Using a knife, gently score a smaller square or circle inside each piece of pastry, being careful not to cut all the way through.
  • Spread a layer of softened goat cheese within the scored area of each tart. Top with a slice of fresh fig or a small spoonful of fig preserves. Drizzle with honey, if using, and season with salt and pepper.

Step 4: Brush with Egg Wash

  • In a small bowl, whisk together the beaten egg and water to make an egg wash. Brush the edges of the puff pastry with the egg wash for a beautiful golden color when baked.

Step 5: Bake the Tarts

  • Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.

Step 6: Garnish and Serve

  • Remove the tarts from the oven and let them cool slightly. Garnish with fresh thyme leaves before serving.
