Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Step 2: Prepare the Puff Pastry
On a lightly floured surface, roll out the thawed puff pastry to smooth out any creases. Cut it into 12 equal squares or circles, depending on your preference.
Step 3: Assemble the Tarts
Place the pastry squares or circles on the prepared baking sheet. Using a knife, gently score a smaller square or circle inside each piece of pastry, being careful not to cut all the way through.
Spread a layer of softened goat cheese within the scored area of each tart. Top with a slice of fresh fig or a small spoonful of fig preserves. Drizzle with honey, if using, and season with salt and pepper.
Step 4: Brush with Egg Wash
In a small bowl, whisk together the beaten egg and water to make an egg wash. Brush the edges of the puff pastry with the egg wash for a beautiful golden color when baked.
Step 5: Bake the Tarts
Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.
Step 6: Garnish and Serve
Remove the tarts from the oven and let them cool slightly. Garnish with fresh thyme leaves before serving.
