- 1 cup fresh strawberries, hulled and halved
- 1 tablespoon honey
- 1 teaspoon balsamic vinegar
- 1 cup ricotta cheese
- 2 tablespoons heavy cream
- 1 teaspoon vanilla extract
- 4 slices sourdough or your favorite artisan bread
- 2 tablespoons butter (optional, for toasting the bread)
- Fresh basil or mint leaves (optional, for garnish)
- Pinch of salt
- Extra honey for drizzling
- Roast the Strawberries: Preheat your oven to 375°F (190°C). Place the halved strawberries on a baking sheet lined with parchment paper. Drizzle with honey and balsamic vinegar, then toss to coat evenly. Roast for 15-20 minutes, or until the strawberries are soft and syrupy. Remove from the oven and set aside to cool slightly.
- Prepare the Whipped Ricotta: While the strawberries are roasting, combine the ricotta, heavy cream, vanilla extract, and a pinch of salt in a mixing bowl. Use a hand mixer (or a whisk) to whip the ricotta until it’s light and fluffy. Taste and adjust sweetness with extra honey, if desired.
- Toast the Bread: Heat a skillet over medium heat and add butter if desired. Toast the bread slices in the skillet until golden brown on both sides. Alternatively, you can toast the bread in a toaster or oven.
- Assemble the Toast: Spread a generous layer of whipped ricotta on each slice of toast. Top with roasted strawberries, making sure to spoon some of the strawberry juices over the top for extra flavor.
- Garnish and Serve: Drizzle a bit of extra honey over the toast and garnish with fresh basil or mint leaves. Serve immediately and enjoy!
