Here’s how to make your very own Halloween Chicken Pie from scratch:

Step 1: Prepare the Filling

  • Start by heating the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes, until softened and translucent.
  • Stir in the minced garlic and cook for another 1 minute until fragrant.
  • Add the shredded chicken and mixed vegetables to the pan, stirring everything together.
  • Sprinkle the flour over the chicken and vegetables, stirring to coat evenly. Cook for about 2 minutes to remove the raw taste of the flour.
  • Slowly pour in the chicken broth, stirring constantly to avoid lumps. Continue to stir until the mixture starts to thicken.
  • Stir in the heavy cream, thyme, rosemary, salt, and pepper. Let the filling simmer for 5-7 minutes, stirring occasionally, until it has thickened to a creamy consistency.
  • Once the filling is done, remove it from the heat and let it cool slightly while you prepare the crust.

Step 2: Prepare the Crust

  • Preheat your oven to 375°F (190°C).
  • Roll out your pie crust on a lightly floured surface. If you’re using store-bought crust, simply unroll the sheets.
