Carefully cut the tops off the bell peppers and remove the seeds and membranes. Use a sharp knife to carve out jack-o’-lantern faces on each pepper.
Step 3: Cook the Filling
In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and garlic, sautéing until softened.
Add the ground turkey or beef to the skillet, cooking until browned. Drain any excess fat if necessary.
Stir in the cooked rice, diced tomatoes, chili powder, cumin, salt, and pepper. Cook for another 5-7 minutes until heated through.
Step 4: Stuff the Peppers
Spoon the filling into each carved bell pepper, packing it tightly. Place the stuffed peppers upright in a baking dish.
Step 5: Bake the Peppers
Cover the baking dish with foil and bake in the preheated oven for about 25-30 minutes. Remove the foil and sprinkle shredded cheese on top if desired. Bake for an additional 10 minutes until the peppers are tender and the cheese is melted.
