For the Stuffed Peppers:

  • 4 large orange bell peppers
  • 1 cup cooked rice (white or brown)
  • 1 pound ground turkey or beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking

For the Garnish:

  • Shredded cheese (optional)
  • Fresh cilantro or parsley for garnish

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 375°F (190°C).

Step 2: Prepare the Peppers

  • Carefully cut the tops off the bell peppers and remove the seeds and membranes. Use a sharp knife to carve out jack-o’-lantern faces on each pepper.

Step 3: Cook the Filling

  • In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and garlic, sautéing until softened.
  • Add the ground turkey or beef to the skillet, cooking until browned. Drain any excess fat if necessary.
  • Stir in the cooked rice, diced tomatoes, chili powder, cumin, salt, and pepper. Cook for another 5-7 minutes until heated through.

Step 4: Stuff the Peppers

  • Spoon the filling into each carved bell pepper, packing it tightly. Place the stuffed peppers upright in a baking dish.

Step 5: Bake the Peppers

  • Cover the baking dish with foil and bake in the preheated oven for about 25-30 minutes. Remove the foil and sprinkle shredded cheese on top if desired. Bake for an additional 10 minutes until the peppers are tender and the cheese is melted.
