Herb-Infused Green Man Picnic Pie Recipe

  • For the pastry:
    • 2 cups all-purpose flour
    • 1 teaspoon salt
    • 1/2 cup cold unsalted butter, cubed
    • 1/4 cup ice water (more if needed)
  • For the filling:
    • 1 tablespoon olive oil
    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 1 cup fresh spinach, chopped
    • 1 cup asparagus, chopped into 1-inch pieces
    • 1 cup mushrooms, sliced
    • 1 cup ricotta cheese
    • 1/2 cup feta cheese, crumbled
    • 2 large eggs
    • 1/4 cup fresh parsley, chopped
    • 1/4 cup fresh dill, chopped
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 teaspoon dried thyme
    • 1 teaspoon dried oregano

Instructions

  • Prepare the pastry: In a large bowl, mix the flour and salt. Add the cold butter and rub it into the flour until it resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together. Shape it into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Cook the filling: In a large skillet, heat olive oil over medium heat. Sauté the onion and garlic until soft. Add the spinach, asparagus, and mushrooms, and cook until tender. Remove from heat and let it cool slightly.
  • Mix the filling: In a large bowl, combine the ricotta, feta, eggs, herbs, salt, pepper, thyme, and oregano. Stir in the cooled vegetable mixture until well combined.
  • Preheat the oven: Preheat your oven to 375°F (190°C).
  • Roll out the pastry: On a lightly floured surface, roll out the pastry into a large circle, about 1/8 inch thick. Transfer it to a pie dish or tart pan, trimming any excess.
  • Fill the pie: Pour the filling into the pastry shell, smoothing the top. Roll out any remaining pastry to create a lattice top or simply cover it with another layer, cutting slits for steam to escape.
  • Bake: Brush the top with a bit of olive oil and bake for 35-40 minutes or until golden brown. Let it cool for at least 15 minutes before slicing.
  • Serve: Enjoy warm or at room temperature, garnished with additional fresh herbs if desired.
