Ingredients

Scale

For the Pancake Batter:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup milk (or plant-based milk)
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Food coloring (orange, purple, and green)

For the Toppings:

  • Maple syrup
  • Whipped cream
  • Halloween-themed sprinkles or candy eyes
  • Powdered sugar (optional)

Instructions

Prepare the Batter

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, combine the milk, egg, melted butter, and vanilla extract.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

Divide and Color the Batter

  • Divide the pancake batter evenly into three bowls.
  • Add a few drops of food coloring to each bowl: one orange, one purple, and one green. Mix until the colors are vibrant and even.

Cook the Mini Pancakes

  • Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  • Transfer each colored batter into separate piping bags or squeeze bottles.
  • Pipe small pancake circles (about the size of a quarter) onto the skillet.
  • Cook for 1-2 minutes on each side or until bubbles form on the surface and the edges are set.

Assemble and Serve

  • Transfer the cooked mini pancakes into a bowl or serve them in individual cups.
  • Top with maple syrup, whipped cream, Halloween sprinkles, and candy eyes as desired.
