Here’s what you’ll need to make Homemade Apple Cider:

  • 810 medium apples, a mix of sweet and tart varieties (Granny Smith, Gala, Honeycrisp)
  • 1 orange, quartered
  • 1 cinnamon stick
  • 45 whole cloves
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup brown sugar (adjust for sweetness)
  • 8 cups water
  • 1 tablespoon lemon juice
  • Optional: 1/4 cup maple syrup or honey (for additional sweetness)

Instructions

Prepare the Apples

  1. Chop the Apples: Core and roughly chop the apples into large chunks, leaving the skin on. No need to peel them as the skins will add extra flavor to the cider.
  2. Combine Ingredients: In a large pot, combine the chopped apples, orange quarters, cinnamon stick, cloves, allspice, nutmeg, and brown sugar.

Simmer the Cider

  1. Add Water: Pour 8 cups of water into the pot, covering the apples and spices.
  2. Bring to a Boil: Place the pot over medium-high heat and bring to a boil.
  3. Reduce to Simmer: Once it begins to boil, reduce the heat to low and let it simmer uncovered for about 1 hour, stirring occasionally.

Mash and Strain the Cider

  1. Mash the Apples: After an hour of simmering, use a potato masher or spoon to mash the apples, releasing their juices. Continue to simmer for another 30 minutes.
  2. Strain the Cider: Set a fine mesh strainer or cheesecloth over a large bowl or pot. Carefully pour the cider through to remove the solid fruit and spices, pressing down to extract all the liquid. Discard the solids.

Adjust and Serve

  1. Taste and Adjust: Taste the cider and adjust the sweetness by adding more brown sugar, honey, or maple syrup if desired. Add lemon juice for a little extra zing.
  2. Serve Warm or Cold: Serve the cider warm or refrigerate it to enjoy chilled later.
