In a mixing bowl, combine the shredded chicken, cheddar cheese, mozzarella cheese, chopped bell peppers, and taco seasoning (if using). Mix well to combine.
Step 2: Cut Out the Faces
Using a small knife or a cookie cutter, carefully cut out jack-o’-lantern faces in the center of two tortillas. Make sure to leave enough border to hold the filling.
Step 3: Assemble the Quesadillas
Place half of the tortillas (without the cutouts) in a skillet over medium heat.
Evenly distribute the filling mixture over these tortillas, then top with the tortillas that have the cut-out faces.
Step 4: Cook the Quesadillas
Cook the quesadillas for about 3-4 minutes on each side or until the tortillas are golden brown and the cheese has melted. You can add a bit of cooking spray or olive oil to the skillet to prevent sticking.

Remove the quesadillas from the skillet and let them cool slightly. Cut into wedges and arrange on a serving platter. Use the sliced olives to create eyes and mouths on the jack-o’-lantern faces, and garnish with fresh cilantro if desired.
