1/2 cup granulated erythritol or your favorite sugar substitute

1 teaspoon vanilla extract
1 cup almond flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Instructions
Prepare the Dough
Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix Cream Cheese and Sweetener: In a medium bowl, beat the softened cream cheese and erythritol together until smooth.
Add Egg and Vanilla: Mix in the egg and vanilla extract until well combined.
Combine Dry Ingredients
Whisk Dry Ingredients: In a separate bowl, whisk together the almond flour, baking powder, and salt.
Combine Mixtures: Gradually add the dry mixture to the cream cheese mixture, stirring until a soft dough forms. If using, fold in chocolate chips or nuts.
Shape and Bake
Scoop Cookies: Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheet, leaving space between each cookie.
Bake: Bake for 12-15 minutes or until the edges are lightly golden.
Cool: Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
