Instructions

Prepare the Dough

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Cream Cheese and Sweetener: In a medium bowl, beat the softened cream cheese and erythritol together until smooth.
  3. Add Egg and Vanilla: Mix in the egg and vanilla extract until well combined.

Combine Dry Ingredients

  1. Whisk Dry Ingredients: In a separate bowl, whisk together the almond flour, baking powder, and salt.
  2. Combine Mixtures: Gradually add the dry mixture to the cream cheese mixture, stirring until a soft dough forms. If using, fold in chocolate chips or nuts.

Shape and Bake

  1. Scoop Cookies: Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheet, leaving space between each cookie.
