Lemon Garlic Herb Chicken Thighs

For the Marinade

  • 4 bone-in, skin-on chicken thighs
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice (about 1 lemon)
  • 4 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Zest of 1 lemon (optional)

Instructions

Marinate the Chicken

  1. Prepare the Marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, rosemary, salt, pepper, and lemon zest until well combined.

  2. Marinate the Chicken: Place the chicken thighs in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

Cook the Chicken

  1. Preheat the Oven: Preheat your oven to 425°F (220°C).

  2. Prepare for Baking: Remove the chicken from the marinade and place it skin-side up on a baking sheet lined with parchment paper or in a cast-iron skillet. Discard any remaining marinade.

  3. Bake the Chicken: Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden and crispy.

  4. Broil (Optional): For extra crispiness, switch to broil for the last 2-3 minutes of cooking, keeping a close eye to avoid burning.

Serve the Chicken

  1. Rest the Chicken: Remove the chicken from the oven and let it rest for about 5 minutes to allow the juices to redistribute.

  2. Garnish and Serve: Serve the chicken thighs hot, garnished with fresh herbs or lemon wedges, alongside your favorite side dishes.
