For the Stir-Fry:

  • 1 lb beef sirloin, cut into thin strips
  • 2 tablespoons vegetable oil
  • 1 medium red onion, sliced
  • 2 medium tomatoes, sliced
  • 1 bell pepper (red or yellow), sliced
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons white vinegar
  • 1 tablespoon fresh cilantro, chopped (for garnish)
  • Salt and pepper, to taste

For Serving:

  • 2 cups cooked white rice
  • 2 cups French fries (store-bought or homemade)

Instructions

Step 1: Prepare the Ingredients

  • Gather all the ingredients and slice the beef, onions, tomatoes, and bell peppers.

Step 2: Cook the Beef

  • In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
  • Add the sliced beef to the skillet and season with salt and pepper. Stir-fry until the beef is browned and cooked through, about 3-5 minutes.
  • Remove the beef from the skillet and set aside.

Step 3: Stir-Fry the Vegetables

  • In the same skillet, add the remaining tablespoon of vegetable oil.
  • Add the sliced onions, garlic, and bell peppers. Stir-fry for about 2-3 minutes until the vegetables are tender but still crisp.
  • Add the sliced tomatoes and cook for an additional minute.

Step 4: Combine with the Sauce

  • Return the cooked beef to the skillet with the vegetables.
  • Pour in the soy sauce and vinegar, stirring to combine all the ingredients.
  • Cook for an additional 1-2 minutes, allowing the flavors to meld together. Adjust seasoning with salt and pepper as needed.

Step 5: Serve

  • Serve the Lomo Saltado over a bed of fluffy white rice and add a side of crispy French fries.
  • Garnish with chopped cilantro for a fresh finish.
