To make Marry Me Shrimp Pasta, gather the following ingredients:

For the Pasta:

  • 8 oz fettuccine or linguine
  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions

Step 1: Cook the Pasta

  • In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta and set it aside.

Step 2: Sauté the Shrimp

  • In a large skillet over medium heat, add the olive oil. Once hot, add the shrimp, seasoning with salt and pepper. Cook for 2-3 minutes on each side until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

Step 3: Make the Sauce

  • In the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for about 1 minute until fragrant. Then, pour in the heavy cream and bring to a gentle simmer.

Step 4: Combine Pasta and Sauce

  • Reduce the heat to low, and add the cooked pasta to the skillet. Stir in the Parmesan cheese and reserved pasta water until the sauce is smooth and creamy. Add the red pepper flakes if desired for a little kick.

Step 5: Add Shrimp

  • Return the shrimp to the skillet, tossing to combine everything evenly. Cook for another 1-2 minutes until heated through.

Step 6: Garnish and Serve

  • Remove from heat and garnish with fresh basil before serving.
