Ingredients

Scale

For the Meatballs

  • 1 lb ground chicken
  • ½ cup feta cheese, crumbled
  • ¼ cup panko breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)
  • 1 tablespoon fresh dill, chopped (optional)
  • ¼ cup Kalamata olives, chopped
  • 1 tablespoon lemon zest
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (for cooking)

For the Tzatziki Sauce (optional but recommended)

  • 1 cup Greek yogurt
  • 1 tablespoon cucumber, grated and excess liquid squeezed out
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon garlic, minced
  • Salt and pepper, to taste

Instructions

Prepare the Meatballs

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Mix the Meatball Ingredients: In a large mixing bowl, combine the ground chicken, crumbled feta cheese, panko breadcrumbs, egg, minced garlic, chopped parsley, oregano, dill (if using), chopped olives, lemon zest, salt, and pepper.
  3. Shape the Meatballs: Use your hands to gently mix the ingredients until well combined. Form the mixture into meatballs, about 1½ inches in diameter, and place them on the prepared baking sheet.
  4. Bake the Meatballs: Bake for 20-25 minutes, or until the meatballs are cooked through and lightly golden on the outside. An internal temperature of 165°F (74°C) indicates they are fully cooked.

Make the Tzatziki Sauce (Optional)

  1. Combine the Ingredients: In a small bowl, mix the Greek yogurt, grated cucumber, lemon juice, fresh dill, garlic, salt, and pepper.
  2. Chill: Refrigerate the tzatziki sauce for at least 15 minutes before serving to allow the flavors to meld together.

Serve

Once the meatballs are ready, serve them hot with a side of tzatziki sauce or on a bed of salad greens or in pita bread.
