Prepare the Meatballs
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Mix the Meatball Ingredients: In a large mixing bowl, combine the ground chicken, crumbled feta cheese, panko breadcrumbs, egg, minced garlic, chopped parsley, oregano, dill (if using), chopped olives, lemon zest, salt, and pepper.
- Shape the Meatballs: Use your hands to gently mix the ingredients until well combined. Form the mixture into meatballs, about 1½ inches in diameter, and place them on the prepared baking sheet.
- Bake the Meatballs: Bake for 20-25 minutes, or until the meatballs are cooked through and lightly golden on the outside. An internal temperature of 165°F (74°C) indicates they are fully cooked.
Make the Tzatziki Sauce (Optional)
- Combine the Ingredients: In a small bowl, mix the Greek yogurt, grated cucumber, lemon juice, fresh dill, garlic, salt, and pepper.
- Chill: Refrigerate the tzatziki sauce for at least 15 minutes before serving to allow the flavors to meld together.
Serve
Once the meatballs are ready, serve them hot with a side of tzatziki sauce or on a bed of salad greens or in pita bread.
