  • Fresh mint leaves (optional, for decoration)
  • Additional mixed berries (for topping)

Instructions

Prepare the Berries

  1. Macerate Berries: In a medium bowl, combine the mixed berries, granulated sugar, and lemon juice. Gently toss to coat the berries and let them sit for about 10-15 minutes to release their juices.

Make the Cream Layer

  1. Whip the Cream: In a large mixing bowl, whip the heavy cream until soft peaks form.
  2. Combine Ingredients: In another bowl, mix the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  3. Fold Together: Gently fold the whipped cream into the mascarpone mixture until fully combined and fluffy.

Assemble the Trifle

  1. Layer Cake: In a large glass trifle dish or individual cups, add a layer of cake cubes at the bottom.
  2. Soak Cake (optional): Drizzle the cake with berry juice or simple syrup if desired for added moisture.
  3. Add Cream Layer: Spoon a layer of the mascarpone cream over the cake.
  4. Layer Berries: Add a layer of the macerated berries, spreading them evenly.
  5. Repeat Layers: Continue layering with cake, cream, and berries until the dish is filled, finishing with a layer of cream on top.

Chill and Serve
