Instructions
Prepare the Potatoes
Preheat Oven: Preheat your oven to 425°F (220°C).
Wash and Cut Potatoes: Clean the baby potatoes and cut them in half if they are large.
Make the Mojo Marinade
Combine Ingredients: In a bowl, mix the orange juice, lime juice, minced garlic, cilantro, cumin, oregano, red pepper flakes (if using), salt, and pepper.
Whisk Together: Stir well to combine all the marinade ingredients.
Marinate the Potatoes
Add Marinade to Potatoes: Place the potatoes in a large bowl and pour the mojo marinade over them.
Toss to Coat: Toss the potatoes in the marinade until they are evenly coated. Allow them to marinate for at least 30 minutes.
Roast the Potatoes
Prepare Baking Sheet: Line a baking sheet with parchment paper or lightly grease it with oil.
Spread Potatoes: Spread the marinated potatoes in a single layer on the prepared baking sheet.
Roast Potatoes: Roast in the preheated oven for 20-25 minutes, or until the potatoes are golden brown and crispy, flipping halfway through for even cooking.
Serve
Garnish and Enjoy: Remove from the oven and serve warm, garnished with additional cilantro if desired.
