Mojo Potatoes

Ingredients

For the Potatoes:

  • 2 pounds baby potatoes (Yukon Gold or red)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

For the Mojo Marinade:

  • 1/4 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 4 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano (dried or fresh)
  • 1/2 teaspoon red pepper flakes (optional for heat)
  • Salt and pepper, to taste

Instructions

Prepare the Potatoes

  1. Preheat Oven: Preheat your oven to 425°F (220°C).
  2. Wash and Cut Potatoes: Clean the baby potatoes and cut them in half if they are large.

Make the Mojo Marinade

  1. Combine Ingredients: In a bowl, mix the orange juice, lime juice, minced garlic, cilantro, cumin, oregano, red pepper flakes (if using), salt, and pepper.
  2. Whisk Together: Stir well to combine all the marinade ingredients.

Marinate the Potatoes

  1. Add Marinade to Potatoes: Place the potatoes in a large bowl and pour the mojo marinade over them.
  2. Toss to Coat: Toss the potatoes in the marinade until they are evenly coated. Allow them to marinate for at least 30 minutes.

Roast the Potatoes

  1. Prepare Baking Sheet: Line a baking sheet with parchment paper or lightly grease it with oil.
  2. Spread Potatoes: Spread the marinated potatoes in a single layer on the prepared baking sheet.
  3. Roast Potatoes: Roast in the preheated oven for 20-25 minutes, or until the potatoes are golden brown and crispy, flipping halfway through for even cooking.

Serve

  1. Garnish and Enjoy: Remove from the oven and serve warm, garnished with additional cilantro if desired.
