For the Dough:

  • 2 1/4 teaspoons active dry yeast
  • 1 1/2 cups warm water (110°F)
  • 1 tablespoon sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt

For the Filling:

  • 8 sticks mozzarella string cheese, cut in half

For the Baking Soda Bath:

  • 10 cups water
  • 2/3 cup baking soda

For Topping:

  • 1 egg, beaten (for egg wash)
  • Coarse salt, for sprinkling

Instructions

Prepare the Dough

  • In a large bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes, until foamy.

Add Flour and Salt

  • Stir in flour and salt, then knead on a floured surface for about 5 minutes, until smooth.

Let It Rise

  • Place the dough in a greased bowl, cover, and let rise for 1 hour, or until doubled in size.

Preheat the Oven

  • Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

Divide and Shape the Dough

  • Divide the dough into 8 pieces. Flatten each piece, wrap around a half stick of cheese, and seal well.

Shape into Pretzels

  • Roll the filled dough into a rope, then shape into a pretzel.

Prepare the Baking Soda Bath

  • Bring water and baking soda to a boil in a large pot. Dip each pretzel in for 30 seconds.

Add Toppings

  • Place the dipped pretzels on the baking sheet, brush with egg wash, and sprinkle with coarse salt.

Bake

  • Bake in the preheated oven for 12-15 minutes, until golden brown.

Serve Warm

  • Allow to cool slightly before serving, so the cheese sets a bit inside.
