Scale

To make this delicious One Pot French Onion Pasta with Crispy Prosciutto, you’ll need:

  • 4 oz prosciutto slices
  • 3 large yellow onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 teaspoon sugar
  • 4 garlic cloves, minced
  • ½ teaspoon dried thyme
  • ½ cup dry white wine or chicken broth (optional, see notes)
  • 4 cups chicken or vegetable broth
  • 8 oz fettuccine or linguine pasta
  • ½ cup heavy cream
  • 1 cup grated Gruyère cheese (or Swiss cheese as a substitute)
  • ½ cup grated Parmesan cheese
  • Salt and freshly cracked black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

Cook the Prosciutto:

  1. Crisp the Prosciutto: Heat a large pot or Dutch oven over medium heat. Add the prosciutto slices and cook until crispy, about 2-3 minutes per side. Remove and set aside on a paper towel-lined plate.

Caramelize the Onions:

  1. Heat Oil and Butter: In the same pot, add olive oil and butter. Once melted, add the sliced onions and sprinkle with sugar.
  2. Caramelize Slowly: Cook the onions over medium-low heat, stirring frequently, for 20-25 minutes until golden and deeply caramelized.
  3. Add Garlic and Thyme: Stir in the minced garlic and thyme, cooking for an additional 1-2 minutes until fragrant.

Deglaze and Simmer:

  1. Deglaze the Pot: Pour in the white wine or chicken broth, scraping up any browned bits from the bottom of the pot. Let it simmer for 2 minutes to reduce slightly.
  2. Add Broth and Pasta: Add the chicken or vegetable broth and bring to a boil. Stir in the pasta and reduce heat to a simmer.

Cook the Pasta:

  1. Simmer Until Tender: Cook the pasta, stirring occasionally, until al dente and the liquid has reduced to a creamy sauce, about 10-12 minutes.

Finish the Dish:

  1. Add Cream and Cheese: Stir in the heavy cream, Gruyère cheese, and Parmesan cheese until the sauce is creamy and well combined. Season with salt and freshly cracked black pepper to taste.
  2. Top with Prosciutto: Break the crispy prosciutto into pieces and sprinkle over the pasta.

Serve and Garnish:

  1. Garnish and Serve: Garnish with fresh parsley if desired, and serve immediately while hot.
