For the Cookies:

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour

  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar (for rolling)

For the Topping:

  • 24 chocolate kisses, unwrapped

Instructions

Prepare the Cookie Dough

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Mix Peanut Butter and Sugars: In a large bowl, combine the peanut butter, granulated sugar, brown sugar, eggs, and vanilla extract. Mix until well combined and smooth.
  3. Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt.
  4. Combine Mixtures: Gradually add the dry ingredients to the peanut butter mixture, mixing until just combined.

Shape the Cookies

  1. Roll Dough Balls: Using a tablespoon or cookie scoop, roll the dough into 1-inch balls.
  2. Roll in Sugar: Roll each dough ball in the additional granulated sugar until coated.

Bake the Cookies

  1. Place on Baking Sheets: Arrange the cookie dough balls on the prepared baking sheets, spacing them about 2 inches apart.
  2. Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.
  3. Add Chocolate Kisses: Remove the cookies from the oven and immediately press a chocolate kiss into the center of each cookie.
  4. Cool: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
