1 cup fresh basil pesto (store-bought or homemade)
¼ cup grated Parmesan cheese (plus extra for serving)
2 tablespoons lemon juice (freshly squeezed)
Instructions
Cook the Pasta
Boil Water: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
Prepare the Shrimp and Vegetables
Heat Oil: In a large skillet over medium heat, heat the olive oil.
Cook Garlic and Mushrooms: Add minced garlic and sliced mushrooms to the skillet. Sauté for about 3-4 minutes until the mushrooms are tender.
Add Shrimp: Add the shrimp to the skillet, season with salt, pepper, and red pepper flakes if using. Cook for about 3-5 minutes until the shrimp are pink and opaque.
Combine Everything
Mix with Pesto: Reduce the heat to low and stir in the cooked pasta, pesto, Parmesan cheese, and lemon juice. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
Toss to Combine: Toss everything together until well combined and heated through.
Serve
Plate and Garnish: Serve immediately, garnished with additional Parmesan cheese and fresh basil if desired.
