For the Pasta:

  • 12 oz spaghetti or your favorite pasta
  • Salt (for pasta water)

For the Shrimp and Vegetables:

  • 1 lb large shrimp, peeled and deveined
  • 8 oz mushrooms, sliced (button or cremini)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • ½ teaspoon red pepper flakes (optional, for heat)

For the Pesto Sauce:

  • 1 cup fresh basil pesto (store-bought or homemade)
  • ¼ cup grated Parmesan cheese (plus extra for serving)
  • 2 tablespoons lemon juice (freshly squeezed)

Instructions

Cook the Pasta

  1. Boil Water: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

Prepare the Shrimp and Vegetables

  1. Heat Oil: In a large skillet over medium heat, heat the olive oil.
  2. Cook Garlic and Mushrooms: Add minced garlic and sliced mushrooms to the skillet. Sauté for about 3-4 minutes until the mushrooms are tender.
  3. Add Shrimp: Add the shrimp to the skillet, season with salt, pepper, and red pepper flakes if using. Cook for about 3-5 minutes until the shrimp are pink and opaque.

Combine Everything

  1. Mix with Pesto: Reduce the heat to low and stir in the cooked pasta, pesto, Parmesan cheese, and lemon juice. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  2. Toss to Combine: Toss everything together until well combined and heated through.

Serve

  1. Plate and Garnish: Serve immediately, garnished with additional Parmesan cheese and fresh basil if desired.
