For the Dumplings:

  • 1 1/2 cups ricotta cheese, well-drained
  • 1 large egg
  • 1 tablespoon unsalted butter, melted
  • 1/4 teaspoon salt
  • 1 1/4 cups all-purpose flour
  • 6 medium-sized ripe plums, halved and pitted
  • 2 tablespoons sugar (for the plum filling)

For the Breadcrumb Coating:

  • 1/4 cup unsalted butter
  • 1/2 cup breadcrumbs
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

Step 1: Prepare the Dough

  • In a large mixing bowl, combine the drained ricotta, egg, melted butter, and salt. Stir until smooth. Gradually add the flour, mixing until a soft dough forms. The dough should be slightly sticky but firm enough to handle.

Step 2: Shape the Dumplings

  • Divide the dough into six equal portions. Flatten each portion into a small disc. Place a plum half in the center of each disc and sprinkle with a little sugar. Fold the dough around the plum, sealing it completely to form a dumpling.

Step 3: Cook the Dumplings

  • Bring a large pot of salted water to a gentle boil. Carefully drop the dumplings into the water and cook for 10-12 minutes, or until they float to the surface. Use a slotted spoon to remove the dumplings and set aside.

Step 4: Prepare the Breadcrumb Coating

  • In a medium skillet, melt the butter over medium heat. Add the breadcrumbs and cook, stirring frequently, until golden brown and crisp. Stir in the sugar and cinnamon (if using), and remove from heat.

Step 5: Coat the Dumplings

  • Roll the cooked dumplings in the toasted breadcrumb mixture until fully coated. The buttery breadcrumbs add a delicious crunch and sweetness to the tender dumplings.
