Ingredients

Scale

You will need the following ingredients to make Raspberry Filled Chocolate Bites:

  • 8 oz dark chocolate (or milk chocolate, if preferred)
  • ½ cup fresh raspberries, mashed
  • 2 tablespoons powdered sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut oil (for coating chocolate)
  • ¼ cup raspberry jam (optional, for extra sweetness)

Instructions

Prepare the Raspberry Filling:

  1. Mash the Raspberries: In a small bowl, gently mash the fresh raspberries with a fork or potato masher until smooth, leaving a few small chunks for texture.
  2. Add Sweeteners and Flavor: Stir in the powdered sugar, lemon juice, and vanilla extract. Mix until the filling is smooth and slightly thickened. If you prefer a sweeter filling, add a tablespoon of raspberry jam to taste.
  3. Chill the Filling: Place the raspberry mixture in the fridge for about 15 minutes to firm up slightly. This helps prevent the filling from being too runny when assembling the chocolate bites.

Melt the Chocolate:

  1. Melt the Chocolate: Break the dark chocolate into small pieces and place it in a heatproof bowl. Add coconut oil to the chocolate and melt it gently using a double boiler or in the microwave, stirring every 20 seconds until smooth and fully melted.

Assemble the Chocolate Bites:

  1. Prepare Molds: Using a silicone chocolate mold or mini muffin tin, spoon a small amount of melted chocolate into each cavity, just enough to cover the bottom. Use the back of a spoon to spread the chocolate evenly.
  2. Add the Raspberry Filling: After the chocolate has set slightly, spoon a small amount of the raspberry filling into the center of each chocolate bite, ensuring not to overflow the mold.
  3. Top with More Chocolate: Cover the raspberry filling with a layer of melted chocolate. Make sure the filling is fully encased in chocolate.
  4. Smooth the Surface: Gently tap the mold on the counter to smooth out the top layer of chocolate and remove any air bubbles.

Chill and Serve:

  1. Chill the Chocolate Bites: Place the filled molds in the fridge for about 30 minutes or until the chocolate is fully set and hard.
  2. Unmold and Serve: Once the chocolate bites have hardened, gently pop them out of the mold and serve immediately, or store them in an airtight container.
