For the Crust:

  • 1 pre-made pie crust (store-bought or homemade)
  • 1 tablespoon sugar
  • 1 tablespoon butter, melted

For the Filling:

  • 2 cups ricotta cheese (preferably whole milk)
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon (optional)
  • 1/4 teaspoon salt
  • Powdered sugar for dusting (optional)

Instructions

Step 1: Prepare the Crust

  • Preheat your oven to 375°F (190°C).
  • If using a homemade pie crust, roll it out and fit it into a 9-inch pie pan. Trim any excess dough and crimp the edges.
  • Brush the crust with melted butter and sprinkle sugar evenly over it. This will give the crust a nice golden color and a hint of sweetness.

Step 2: Prepare the Filling

  • In a large mixing bowl, combine the ricotta cheese, eggs, granulated sugar, vanilla extract, lemon zest (if using), and salt. Mix until well combined and smooth, ensuring there are no lumps.

Step 3: Assemble the Pie

  • Pour the ricotta filling into the prepared pie crust, spreading it evenly.

Step 4: Bake the Pie

  • Bake in the preheated oven for 35-40 minutes, or until the filling is set and the top is lightly golden. The pie will puff up slightly and will settle as it cools.
  • Remove from the oven and allow to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours before serving. Chilling helps the flavors develop and makes slicing easier.
