Roasted Garlic and Cheese Pull Apart Bread

For the Bread:

  • 1 loaf of Italian or French bread (store-bought or homemade)
  • 1/2 cup unsalted butter, melted
  • 1/4 cup olive oil
  • 1 head of garlic
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)
  • Salt and freshly ground black pepper

Instructions

  • Roast the Garlic:
    • Preheat your oven to 400°F (200°C).
    • Slice the top off the garlic head to expose the cloves. Drizzle with a little olive oil and wrap in foil.
    • Roast in the preheated oven for 30-35 minutes, or until the cloves are soft and caramelized. Let cool slightly, then squeeze the roasted garlic out of the skins and set aside.
  • Prepare the Bread:
    • Preheat your oven to 375°F (190°C).
    • Place the loaf of bread on a cutting board. Using a serrated knife, make vertical cuts about 1 inch apart, but don’t cut all the way through the bottom of the loaf. Then make horizontal cuts to create a grid pattern, again not cutting all the way through the bottom.
  • Prepare the Garlic and Cheese Mixture:
    • In a small bowl, combine the melted butter, olive oil, and roasted garlic. Mix well.
    • Stir in the shredded mozzarella, grated Parmesan, chopped rosemary, and salt and pepper to taste.
  • Assemble the Bread:
    • Using a spoon or brush, carefully stuff the garlic and cheese mixture between the cuts in the bread, making sure to distribute it evenly throughout.
    • Place the prepared bread on a baking sheet lined with parchment paper or aluminum foil.
  • Bake:
    • Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly and the bread is golden brown.
    • If you like your bread extra crispy, you can place it under the broiler for an additional 1-2 minutes, but watch closely to prevent burning.
  • Serve:
    • Remove from the oven and let cool slightly. Garnish with chopped parsley if desired.
    • Serve warm, allowing guests to pull apart the pieces of bread.
