For the Pumpkin Layer:

  • 1 cup pumpkin puree
  • 1 cup heavy whipping cream
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger

For the Caramel Sauce:

  • 1/2 cup caramel sauce, store-bought or homemade
  • 1/4 tsp sea salt, or to taste

For the Graham Cracker Crumble:

  • 1 cup graham cracker crumbs
  • 2 tbsp melted butter
  • 1 tbsp brown sugar

Instructions

Prepare the Graham Cracker Crumble

  1. Mix Ingredients: In a medium bowl, combine graham cracker crumbs, melted butter, and brown sugar.
  2. Stir and Set Aside: Stir until the crumbs are well-coated and set aside.

Make the Pumpkin Layer

  1. Whip Cream: In a large bowl, whip the heavy cream until soft peaks form. Set aside.
  2. Blend Pumpkin Mixture: In another bowl, beat the softened cream cheese, pumpkin puree, powdered sugar, cinnamon, nutmeg, and ginger until smooth.
  3. Fold in Whipped Cream: Gently fold the whipped cream into the pumpkin mixture until fully combined.

Assemble the Parfaits

  1. Add Graham Cracker Layer: Spoon a layer of graham cracker crumble into the bottom of each parfait glass.
  2. Layer Pumpkin Mixture: Add a layer of the pumpkin mixture on top of the graham crackers.
  3. Add Caramel Sauce: Drizzle a layer of salted caramel sauce over the pumpkin mixture.
  4. Repeat Layers: Repeat the layers, finishing with a drizzle of caramel sauce on top.

Chill and Serve

  1. Chill (Optional): Refrigerate for at least 5 minutes to let the flavors meld.
  2. Serve: Garnish with extra graham cracker crumbs or a dollop of whipped cream if desired, and enjoy!
