Ingredients

Scale

Here’s what you’ll need to make Shrimp Saganaki:

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup crushed tomatoes (or fresh tomatoes, chopped)
  • ½ cup dry white wine (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (optional for heat)
  • 4 oz feta cheese, crumbled
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 lemon, cut into wedges (for serving)
  • 1 tablespoon fresh dill or basil (optional for garnish)

Instructions

Cook the Shrimp:

  1. Heat the Olive Oil: In a large skillet or sauté pan, heat the olive oil over medium heat.
  2. Cook the Shrimp: Add the shrimp to the pan and cook for about 2-3 minutes per side, or until the shrimp are pink and cooked through. Remove the shrimp from the pan and set aside.

Prepare the Sauce:

  1. Sauté the Onion and Garlic: In the same pan, add the chopped onion and sauté for about 2-3 minutes until softened. Add the minced garlic and cook for an additional 1 minute, until fragrant.
  2. Add the Tomatoes and Wine: Stir in the crushed tomatoes, white wine (if using), and dried oregano. Bring the mixture to a simmer and cook for about 5-7 minutes, until the sauce thickens slightly. Season with salt and black pepper to taste.

Combine Shrimp and Sauce:

  1. Return the Shrimp to the Pan: Add the cooked shrimp back into the skillet, nestling them into the sauce. Sprinkle the crumbled feta cheese over the top of the shrimp and sauce, then cover the pan with a lid.
  2. Melt the Feta: Let the pan simmer for another 2-3 minutes until the feta begins to melt into the sauce, creating a creamy texture.

Finish and Serve:

  1. Garnish: Sprinkle fresh parsley (and dill or basil, if desired) over the top of the dish for a burst of color and freshness.
  2. Serve: Serve immediately with lemon wedges on the side and warm crusty bread to soak up the delicious sauce.
