Instructions

Prepare the Shrimp Scampi:

  1. Cook the Shrimp: Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until pink and opaque. Remove shrimp from the pan and set aside.
  2. Sauté the Garlic: In the same skillet, add the minced garlic and sauté for about 1 minute, until fragrant. Be careful not to burn the garlic.
  3. Add Lemon and Wine: Pour in the white wine (or chicken broth) and fresh lemon juice. Scrape up any bits stuck to the bottom of the pan. Let the mixture simmer for 2 minutes to reduce slightly.
  4. Finish the Sauce: Stir in the butter and red pepper flakes (if using) and cook until the butter is melted and the sauce is smooth. Season with salt and pepper to taste.
  5. Add the Shrimp Back In: Return the cooked shrimp to the skillet, tossing them in the sauce to coat. Remove from heat and sprinkle with lemon zest and chopped parsley.

Prepare the Flatbreads:

  1. Toast the Flatbread: Preheat your oven to 400°F (200°C). Place the flatbreads on a baking sheet and toast in the oven for 5 minutes until lightly crispy.
  2. Brush with Butter: Remove the flatbreads from the oven and brush each with the melted butter for added flavor and richness.

Assemble the Flatbread:
