Sweet Christmas Chocolate Cupcakes

For the Chocolate Cupcakes:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder (unsweetened)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup milk
  • 1/2 cup hot water

For the Buttercream Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 23 tablespoons milk
  • 1 teaspoon vanilla extract
  • Food coloring (red, green, or your preferred holiday colors)
  • Holiday sprinkles or decorations (optional)

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C) and line a cupcake pan with 12 cupcake liners.
  • Mix Dry Ingredients:
    • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Mix Wet Ingredients:
    • In a separate bowl, whisk together the vegetable oil, eggs, vanilla extract, and milk until smooth.
  • Combine and Add Water:
    • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Then, slowly pour in the hot water, mixing until the batter is smooth (it will be thin, but that’s okay).
  • Bake:
    • Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Let them cool completely on a wire rack before frosting.
  • Prepare the Buttercream Frosting:
    • In a large bowl, beat the softened butter with an electric mixer until creamy. Gradually add the powdered sugar, one cup at a time, mixing well after each addition.
    • Add vanilla extract and 2 tablespoons of milk. Continue beating until smooth and fluffy. If the frosting is too thick, add an additional tablespoon of milk. If you’re adding food coloring, divide the frosting into bowls and add your desired colors.
  • Decorate:
    • Frost the cooled cupcakes with the buttercream frosting using a piping bag or a knife. Top with festive holiday sprinkles or decorations like mini candy canes, edible glitter, or Christmas-themed toppers.
