For the Tartlets:

  • 1 sheet of puff pastry, thawed
  • 2 cups cherry or grape tomatoes, halved
  • 4 oz goat cheese or cream cheese, softened
  • 1/2 cup grated mozzarella cheese
  • 1 teaspoon dried Italian herbs (such as oregano or basil)
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)
  • Fresh basil leaves (for garnish)

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2: Prepare the Puff Pastry

  • On a lightly floured surface, roll out the thawed puff pastry to smooth out any creases. Cut the pastry into 3-inch squares or circles.

Step 3: Create the Tartlet Base

  • Place the puff pastry squares or circles on the prepared baking sheet. Use a sharp knife to gently score a smaller square or circle within each piece, about 1/2 inch from the edge, being careful not to cut all the way through. This will create a border for the tartlets.

Step 4: Prepare the Filling

  • In a bowl, mix the softened goat cheese (or cream cheese), grated mozzarella cheese, dried Italian herbs, salt, and pepper until well combined.

Step 5: Assemble the Tartlets

  • Spoon a dollop of the cheese mixture into the center of each puff pastry base, spreading it slightly towards the edges. Arrange the halved tomatoes on top of the cheese mixture, cut side up.

Step 6: Brush with Egg Wash

  • Brush the edges of the puff pastry with the beaten egg to give the tartlets a beautiful golden color when baked.

Step 7: Bake the Tartlets

  • Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the puff pastry is golden brown and the tomatoes are softened.
