Making your own torrone can be straightforward if you follow these steps carefully:

1. Prepare Nuts: Preheat your oven to 350°F (175°C). Spread almonds and hazelnuts on a baking sheet and toast them for about 10-12 minutes until golden brown. Let them cool.
2. Make Sugar-Honey Mixture: In a saucepan, combine sugar and honey. Heat over medium-low heat, stirring continuously until the sugar dissolves.
3. Boil Mixture: Increase the heat to medium-high until the mixture reaches 250°F (121°C). Use a candy thermometer for accuracy.
4. Whip Egg Whites: While the sugar mixture boils, whip the egg whites in a separate bowl until they form stiff peaks. This usually takes about 5 minutes.
