  • 1 block (8 oz) cream cheese, softened
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup salsa or diced tomatoes with green chilies
  • 1 can (4 oz) diced green chilies (optional)
  • 2 tablespoons chopped green onions (for garnish)
  • ¼ cup sliced black olives (optional)
  • 2 tablespoons chopped fresh cilantro (for garnish)

Instructions

1. Preheat and Prepare:

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a 9×9-inch baking dish or a similar-sized oven-safe dish.

2. Mix the Dip Base:

  • In a large mixing bowl, combine the refried beans, cream cheese, sour cream, garlic powder, onion powder, chili powder, and cumin.
  • Stir until smooth and well combined.

3. Layer and Add Cheese:

  • Spread the bean mixture evenly in the prepared baking dish.
  • Pour salsa or diced tomatoes over the top.
  • Sprinkle a mix of cheddar and Monterey Jack cheese evenly over the top.

4. Bake:

  • Place the dish in the preheated oven.
  • Bake for 20-25 minutes or until the cheese is melted and bubbly.

5. Garnish and Serve:

  • Remove from the oven and let it cool for 5 minutes.
  • Garnish with green onions, sliced black olives, and chopped cilantro.
