Ingredients

Scale

For the Shrimp Fritters:

  • 1 lb shrimp, peeled, deveined, and chopped into small pieces
  • 1/2 cup rice flour
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 cup cold water
  • 1 egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup fresh mint leaves, chopped (optional)
  • 12 small red chilies, finely chopped (optional)
  • Vegetable oil for frying

For the Nuoc Cham Dipping Sauce:

  • 3 tablespoons fish sauce
  • 1 tablespoon sugar
  • 2 tablespoons lime juice (freshly squeezed)
  • 1/4 cup warm water
  • 1 garlic clove, minced
  • 12 small red chilies, finely chopped (optional)
  • 1 tablespoon rice vinegar (optional for extra tang)

Instructions

Prepare the Nuoc Cham Dipping Sauce:

  1. Combine the Ingredients: In a small bowl, whisk together the fish sauce, sugar, lime juice, and warm water until the sugar dissolves completely.
  2. Add Garlic and Chilies: Stir in the minced garlic and finely chopped chilies. Adjust the heat level by adding more or less chili to taste.
  3. Optional Addition: For an extra layer of tang, you can add a tablespoon of rice vinegar.
  4. Set Aside: Let the sauce sit for at least 10 minutes for the flavors to meld together. Set aside for dipping.

Make the Shrimp Fritter Batter:

  1. Prepare the Shrimp: In a medium bowl, combine the chopped shrimp, green onions, cilantro, mint (optional), and red chilies (optional).
  2. Make the Batter: In a separate large bowl, whisk together the rice flour, all-purpose flour, baking powder, salt, and pepper. Add the egg and cold water, stirring to form a smooth batter.
  3. Mix Shrimp and Batter: Fold the shrimp mixture into the batter, ensuring the shrimp is well-coated.

Fry the Shrimp Fritters:

  1. Heat the Oil: Heat about 1 inch of vegetable oil in a large skillet or wok over medium-high heat. The oil should be hot but not smoking—test by dropping a small bit of batter into the oil; if it sizzles, it’s ready.
  2. Fry the Fritters: Using a spoon or your hands, drop spoonfuls of the shrimp mixture into the hot oil, flattening them slightly to form small fritters. Fry in batches, being careful not to overcrowd the pan.
  3. Cook Until Golden: Fry the fritters for 2-3 minutes on each side, or until they are golden brown and crispy.
  4. Drain the Fritters: Remove the fritters from the oil and place them on a plate lined with paper towels to drain excess oil.

Serve the Fritters:

  1. Serve with Nuoc Cham: Serve the crispy shrimp fritters hot with the freshly prepared Nuoc Cham dipping sauce on the side.
