For the Main Dish:

  • 1 pound gnocchi (fresh or store-bought)
  • 1 can (15 ounces) white beans, drained and rinsed (such as cannellini or navy beans)
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil for extra flavor)
  • 2 cups fresh spinach, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil, for garnish
  • Grated Parmesan cheese, for serving (optional)

Instructions

Cook the Gnocchi

  • Bring a large pot of salted water to a boil.
  • Add the gnocchi and cook according to package instructions until they float to the surface (about 2-3 minutes for fresh gnocchi).
  • Drain and set aside.

Sauté the Aromatics

  • In a large skillet, heat olive oil over medium heat.
  • Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add the Sun-Dried Tomatoes and Beans

  • Stir in the chopped sun-dried tomatoes and white beans.
  • Cook for 2-3 minutes, allowing the flavors to meld together.

Incorporate the Spinach

  • Add the chopped spinach to the skillet and cook until wilted, about 2 minutes.
  • Season with Italian seasoning, salt, and pepper to taste.

Combine with Gnocchi

  • Gently fold the cooked gnocchi into the skillet, mixing until well combined.
  • If the dish seems dry, you can add a splash of the reserved pasta water.

Serve

  • Plate the gnocchi and garnish with fresh basil and grated Parmesan cheese, if desired.
  • Enjoy hot!
