Ingredients

Scale

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon Aleppo pepper (or to taste)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin
  • Salt and pepper, to taste
  • 1 tablespoon fresh lemon juice
  • Fresh cilantro, chopped (for garnish)

For the Creamed Corn:

  • 4 cups fresh or frozen corn kernels (about 4 ears of corn)
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 1 cup heavy cream
  • 1 teaspoon sugar (optional, to taste)
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Prepare the Shrimp:

  1. Season the Shrimp: In a bowl, toss the shrimp with Aleppo pepper, paprika, cumin, salt, pepper, and olive oil. Let it marinate for 5-10 minutes to absorb the flavors.
  2. Cook the Shrimp: Heat a large skillet over medium-high heat. Add the shrimp to the pan and cook for 2-3 minutes on each side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Sauté the Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds, until fragrant.
  4. Add Lemon Juice: Squeeze fresh lemon juice over the shrimp and toss to coat, then return the shrimp to the skillet to warm through. Set aside.

Prepare the Creamed Corn:

  1. Sauté the Onion: In a separate pan, melt the butter over medium heat. Add the chopped onion and cook for about 3 minutes until softened and translucent.
  2. Cook the Corn: Add the corn kernels to the pan with the onion and cook for 4-5 minutes, stirring occasionally, until heated through.
  3. Add Cream and Sugar: Pour in the heavy cream and stir to combine. If desired, add the sugar to balance the sweetness of the corn. Cook for an additional 2-3 minutes, allowing the cream to thicken slightly.
  4. Season the Creamed Corn: Season with salt and pepper to taste, then remove from heat.

Assemble and Serve:

  1. Plate the Dish: Spoon a generous portion of creamed corn onto each plate. Arrange the Aleppo pepper shrimp on top of the corn, garnishing with fresh cilantro and parsley.
  2. Serve: Serve immediately while hot, and enjoy!
