Gather the following ingredients to make your Blue Christmas Truffles:

  • 8 oz (225g) high-quality dark chocolate
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips (for coating)
  • 1/4 cup blue food coloring (gel or liquid)
  • Edible glitter or sprinkles (optional for decoration)

Instructions

Make the Ganache Center:

  1. Chop the Dark Chocolate: Chop the dark chocolate into small, even pieces for easier melting.
  2. Heat the Cream: In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Be careful not to let it boil.
  3. Combine with Chocolate: Remove the cream from heat and pour it over the chopped dark chocolate. Let it sit for 2 minutes to melt.
  4. Stir the Ganache: Stir the mixture gently until smooth and fully combined. Add the vanilla extract and mix again.

Chill the Ganache:

  1. Chill the Ganache: Let the ganache cool slightly, then transfer it to the fridge for 1 hour, or until it firms up enough to scoop and roll into balls.

Form the Truffles:

  1. Roll into Balls: Using a melon baller or a spoon, scoop out small amounts of ganache and roll them into smooth balls with your hands. Place the balls on a parchment-lined baking sheet.
  2. Chill Again: Place the rolled truffles back in the fridge for 30 minutes to firm up.

Coat with White Chocolate:

  1. Melt the White Chocolate: In a heatproof bowl, melt the white chocolate chips using a microwave or a double boiler. If using a microwave, heat in 20-second intervals, stirring in between.
  2. Add Food Coloring: Once melted, add the blue food coloring and stir until you achieve a vibrant blue color.
  3. Dip the Truffles: Using a fork or dipping tool, dip each truffle into the blue-colored white chocolate, covering it completely. Let any excess chocolate drip off.
  4. Set the Coating: Place the dipped truffles back on the parchment-lined sheet and let them set for 10-15 minutes at room temperature, or speed up the process by refrigerating them.

Optional Decoration:

  1. Add Sprinkles: If desired, while the chocolate coating is still wet, sprinkle edible glitter or festive sprinkles on top of the truffles for an extra touch of sparkle.
