Prepare the Apple Filling:
Caramelize the Apples: In a skillet, melt the butter over medium heat. Add the diced apples and brown sugar, cooking for 5-7 minutes until the apples are soft and caramelized. Remove from heat and let cool slightly.
Make the Batter:
Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
Combine Wet Ingredients: In a separate bowl, whisk the eggs, milk, and bourbon until smooth.
