  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 large eggs
  • ¾ cup whole milk
  • 2 tablespoons bourbon
  • 2 medium apples (Granny Smith or Honeycrisp), peeled and diced
  • 2 tablespoons unsalted butter
  • 1 tablespoon brown sugar
  • Vegetable oil for frying

For the Bourbon Glaze:

  • 1 cup powdered sugar
  • 23 tablespoons bourbon
  • 12 tablespoons milk (as needed for consistency)

Instructions

Prepare the Apple Filling:

  1. Caramelize the Apples: In a skillet, melt the butter over medium heat. Add the diced apples and brown sugar, cooking for 5-7 minutes until the apples are soft and caramelized. Remove from heat and let cool slightly.

Make the Batter:

  1. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  2. Combine Wet Ingredients: In a separate bowl, whisk the eggs, milk, and bourbon until smooth.
  3. Form the Batter: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the caramelized apples.

Fry the Fritters:

  1. Heat the Oil: In a deep skillet or Dutch oven, heat about 2 inches of oil to 350°F (175°C).
  2. Shape the Fritters: Use a large spoon or ice cream scoop to drop portions of batter into the hot oil.
  3. Fry to Golden Perfection: Fry the fritters in batches for 2-3 minutes per side or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Make the Bourbon Glaze:

  1. Mix the Glaze: In a small bowl, whisk together the powdered sugar, bourbon, and milk until smooth and pourable. Adjust the consistency with more milk if needed.

Finish the Fritters:

  1. Drizzle the Glaze: Once the fritters are slightly cooled, drizzle the bourbon glaze over the top.
  2. Serve Warm: Enjoy the fritters fresh and warm for the best flavor and texture.
