Ingredients

Gather these ingredients to make your Brie Stuffed Prosciutto Wrapped Orange Chicken:

4 boneless, skinless chicken breasts

4 oz brie cheese, rind removed and cut into 4 slices

8 slices prosciutto

1 tablespoon olive oil

1 clove garlic, minced

1 cup fresh orange juice

2 tablespoons honey

1 tablespoon soy sauce

1 teaspoon orange zest

1/2 teaspoon red pepper flakes (optional)

Salt and freshly ground black pepper, to taste

Fresh parsley, for garnish (optional)

Instructions

Prepare the Chicken Breasts:

  1. Butterfly the Chicken: Place each chicken breast on a cutting board. Using a sharp knife, slice horizontally through the center of the breast, being careful not to cut all the way through. Open the breast like a book, creating a butterfly shape.

  2. Pound the Chicken (Optional): If the chicken breasts are very thick, you can gently pound them with a meat mallet to an even thickness. This will help them cook more evenly.

  3. Season the Chicken: Season the inside of each butterflied chicken breast with salt and freshly ground black pepper.

Stuff and Wrap the Chicken:

  1. Stuff with Brie: Place a slice of brie cheese in the center of each butterflied chicken breast.

  2. Fold and Secure: Fold one side of the chicken breast over the brie, closing it. Use toothpicks to secure the edges, if needed, to keep the cheese from escaping during cooking.

  3. Wrap with Prosciutto: Wrap each stuffed chicken breast with two slices of prosciutto, overlapping them to fully cover the chicken.

Prepare the Orange Glaze:

  1. Sauté the Garlic: Heat the olive oil in a medium saucepan over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.

  2. Add Orange Juice and Honey: Pour the fresh orange juice and honey into the saucepan. Stir in the soy sauce, orange zest, and red pepper flakes (if using).

  3. Simmer and Reduce: Bring the sauce to a simmer and cook for about 15-20 minutes, or until it has reduced and thickened slightly. The sauce should be able to coat the back of a spoon.

  4. Adjust Seasoning: Taste the sauce and adjust seasoning with salt and pepper, if needed.

Cook the Chicken:

  1. Sear the Chicken (Optional): For added color and flavor, you can sear the prosciutto-wrapped chicken breasts in a skillet before baking. Heat a tablespoon of olive oil in a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side, until the prosciutto is lightly browned.

  2. Bake the Chicken: Preheat your oven to 375°F (190°C). Place the prosciutto-wrapped chicken breasts in a baking dish.

  3. Bake: Pour half of the orange glaze over the chicken breasts. Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

  4. Glaze Again: Remove the chicken from the oven and brush with the remaining orange glaze.

Serve:

  1. Rest the Chicken: Let the chicken rest for a few minutes before serving.

  2. Garnish: Garnish with fresh parsley, if desired. Serve the Brie Stuffed Prosciutto Wrapped Orange Chicken immediately.
