Ingredients

Scale

For the Cake:

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream or plain yogurt
  • ½ cup strong brewed coffee, cooled

Chocolate Ribbon:

  • ½ cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • 2 tablespoons all-purpose flour
  • ¼ cup (½ stick) unsalted butter, melted

Streusel Topping:

  • ½ cup all-purpose flour
  • ½ cup packed brown sugar
  • ¼ cup (½ stick) unsalted butter, cold and cubed
  • ¼ cup chopped nuts (optional, such as walnuts or pecans)

Instructions

Prepare the Streusel Topping:

  1. Combine Dry Ingredients: In a medium bowl, combine the flour, brown sugar, and chopped nuts (if using).

  2. Cut in Butter: Add the cold, cubed butter to the bowl. Use a pastry blender or your fingertips to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.

  3. Refrigerate: Cover the bowl and refrigerate the streusel while you prepare the cake.

Prepare the Chocolate Ribbon:

  1. Combine Dry Ingredients: In a small bowl, combine the sugar, cocoa powder, and flour.

  2. Add Melted Butter: Pour the melted butter into the bowl and stir until the mixture forms a thick paste. Set aside.

Prepare the Cake Batter:

  1. Preheat Oven: Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.

  2. Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

  3. Cream Butter and Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy.

  4. Add Eggs: Beat in the eggs one at a time, then stir in the vanilla extract.

  5. Alternate Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream or yogurt, beginning and ending with the dry ingredients. Mix until just combined.

  6. Stir in Coffee: Stir in the cooled brewed coffee.

Assemble the Cake:

  1. Layer the Batter: Spread half of the cake batter into the prepared baking pan.

  2. Swirl in Chocolate Ribbon: Drop spoonfuls of the chocolate ribbon mixture over the batter, then use a knife or skewer to swirl it into the batter.

  3. Add Remaining Batter: Spread the remaining cake batter over the chocolate ribbon layer.

  4. Sprinkle with Streusel: Sprinkle the chilled streusel topping evenly over the cake.

Bake:

  1. Bake: Bake for 55-60 minutes, or until a wooden skewer inserted into the center comes out clean.

  2. Cool: Let the cake cool in the pan for 10-15 minutes before slicing and serving.
