Ingredients

Scale

Here’s what you’ll need to make Classic Macaroni Salad:

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1 celery stalk, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup green bell pepper, finely chopped
  • 2 hard-boiled eggs, chopped
  • 1/2 cup frozen peas (optional)
  • Salt and pepper to taste
  • Paprika for garnish (optional)

Instructions

Cook the Macaroni:

  1. Boil the Macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package instructions (usually about 8-10 minutes) until tender but still firm. Drain and rinse under cold water to cool it down and stop the cooking process. Set aside.

Prepare the Dressing:

  1. Mix the Dressing: In a large mixing bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, and sugar. Stir until smooth and well combined.

Combine the Ingredients:

  1. Add the Vegetables and Eggs: To the dressing, add the chopped celery, red onion, bell pepper, and hard-boiled eggs. If you’re using peas, add them as well. Stir gently to combine.
  2. Toss the Macaroni: Add the cooled macaroni to the bowl with the dressing and vegetables. Gently toss to coat the pasta evenly with the creamy dressing.

Chill and Serve:

  1. Chill the Salad: Cover the salad with plastic wrap or a lid and refrigerate for at least 45 minutes to allow the flavors to meld together.
  2. Garnish and Serve: Before serving, sprinkle with paprika for a pop of color, if desired. Serve chilled.
