Ingredients

Scale

Gather these ingredients to make your Cowboy Soup:

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 medium potatoes, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) corn kernels, drained
  • 4 cups beef broth
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Fresh cilantro or parsley, for garnish (optional)

Instructions

Cook the Ground Beef:

  1. Brown the Beef: In a large soup pot, heat 1 tablespoon of olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Once browned, drain any excess fat and set the beef aside.

Prepare the Soup Base:

  1. Sauté the Veggies: In the same pot, add the remaining tablespoon of olive oil. Add the chopped onion, carrots, and minced garlic, and sauté for about 5 minutes until the vegetables begin to soften and the onion becomes translucent.
  2. Add the Spices: Stir in the chili powder, cumin, paprika, salt, and pepper, and cook for another minute to let the spices bloom and become fragrant.

Combine the Ingredients:

  1. Add the Liquids and Beans: Pour in the beef broth and bring it to a simmer. Add the diced tomatoes, kidney beans, black beans, and corn. Stir to combine and let the soup simmer for 20-30 minutes, allowing the flavors to meld together.

Add the Potatoes:

  1. Cook the Potatoes: Add the diced potatoes to the soup and simmer for another 15-20 minutes, or until the potatoes are tender and cooked through.

Final Adjustments:

  1. Taste and Adjust Seasoning: Taste the soup and adjust the seasoning as needed, adding more salt, pepper, or chili powder if desired.

Serve and Garnish:

  1. Serve: Ladle the soup into bowls and garnish with fresh cilantro or parsley, if desired. Serve with a side of cornbread or tortilla chips for extra crunch.
