  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound mushrooms (cremini or white button), sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup heavy cream
  • ½ cup chicken or vegetable broth
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

Melt the Butter and Oil

  • Heat a large skillet over medium heat and add the butter and olive oil.

Sauté the Onions and Garlic

  • Add the chopped onion to the skillet and cook until softened, about 3 minutes.
  • Stir in the minced garlic and cook for an additional 30 seconds.

Cook the Mushrooms

  • Add the sliced mushrooms to the skillet, stirring occasionally.
  • Season with salt and pepper, and cook for 5-7 minutes until the mushrooms release their juices and start to brown.

Add the Cream and Broth

  • Pour in the heavy cream and chicken or vegetable broth.
  • Stir in the Dijon mustard and thyme, bringing the mixture to a gentle simmer.

Thicken the Sauce

  • Let the sauce simmer for 5-7 minutes, or until it reaches your desired consistency.

Add the Parmesan (Optional)

  • Stir in the grated Parmesan cheese if using, for extra flavor.

Adjust Seasoning

  • Taste the sauce and adjust the salt and pepper as needed.

Serve

  • Serve the Creamy Mushroom Sauce over your favorite dish, such as steak, chicken, pasta, or mashed potatoes.
