Ingredients

– 1 pound shrimp, peeled and deveined
– 8 small corn tortillas
– 2 cups shredded cheese (cheddar or your choice)
– 1 cup sour cream
– 1 cup cream of mushroom soup
– 1/2 cup diced onion
– 1/2 cup diced bell pepper
– 1 tablespoon olive oil
– 2 cloves garlic, minced
– 1 teaspoon chili powder
– Salt and pepper to taste
– Fresh cilantro for garnish (optional)

Instructions

Creating these Creamy Shrimp Enchiladas is straightforward if you follow these steps:

1. Preheat Oven: Preheat your oven to 350°F (175°C).
2. Prepare Filling: In a skillet, heat olive oil over medium heat. Add diced onions, bell peppers, and garlic. Cook until the vegetables are soft, about 5 minutes. Add shrimp, chili powder, salt, and pepper. Cook until shrimp is pink and cooked through, around 3-5 minutes. Remove from heat and set aside.
3. Make Sauce: In a mixing bowl, combine sour cream and cream of mushroom soup. Mix until well blended. You can add a little chili powder for extra flavor if desired.
4. Assemble Enchiladas: Take a tortilla, place some shrimp filling in the center, and sprinkle with cheese. Roll the tortilla and place it seam-side down in a greased baking dish. Repeat with the remaining tortillas.
5. Add Sauce: Pour the sauce over the assembled enchiladas and top with additional cheese. Bake in the preheated oven for 25-30 minutes or until heated through and the cheese is bubbly.
