Ingredients

Scale

Gather these ingredients to make your Finnish Salmon Soup (Lohikeitto):

  • 1.5 lbs skinless salmon fillet, cut into 1-inch cubes
  • 8 cups fish or chicken broth
  • 1.5 lbs Yukon Gold potatoes, peeled and cut into 1-inch cubes
  • 2 carrots, peeled and sliced
  • 1 large leek, white and light green parts only, thinly sliced and washed thoroughly
  • 1/2 cup heavy cream or half-and-half
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour (optional, for thickening)
  • 1 tablespoon dried dill, or 23 tablespoons fresh dill, chopped
  • 1/4 teaspoon ground allspice
  • Salt and freshly ground white pepper, to taste
  • Fresh dill sprigs, for garnish (optional)
  • Lemon wedges, for serving (optional)

Instructions

Prepare the Ingredients:

  1. Prepare the Vegetables: Peel and cube the potatoes, slice the carrots, and thinly slice and wash the leek thoroughly to remove any dirt.

  2. Cube the Salmon: Cut the skinless salmon fillet into 1-inch cubes.

  3. Chop the Dill: If using fresh dill, chop it finely.

Cook the Soup:

  1. Sauté the Leeks: In a large pot or Dutch oven, melt the butter over medium heat. Add the sliced leek and sauté for about 5 minutes, or until softened but not browned.

  2. Add Flour (Optional): If using flour to thicken the soup, sprinkle it over the leeks and cook for 1 minute, stirring constantly.

  3. Pour in Broth: Gradually pour in the fish or chicken broth, stirring to prevent lumps. Bring the mixture to a simmer.

  4. Add Potatoes and Carrots: Add the cubed potatoes and sliced carrots to the pot. Simmer for about 15-20 minutes, or until the potatoes are tender.

  5. Add Salmon and Spices: Gently add the cubed salmon, dill, and allspice to the pot. Simmer for about 5-7 minutes, or until the salmon is cooked through and flakes easily with a fork. Be careful not to overcook the salmon.

  6. Stir in Cream: Stir in the heavy cream or half-and-half and heat through gently. Do not boil, as this can cause the cream to curdle.

  7. Season: Season the soup with salt and freshly ground white pepper to taste.

Serve:

  1. Garnish: Ladle the Finnish Salmon Soup into bowls and garnish with fresh dill sprigs, if desired.

  2. Serve with Lemon: Serve with lemon wedges on the side, if desired, for a touch of brightness.
