Ingredients

Scale

To make Flavorful Green Pasta Sauce, you’ll need:

  • 2 cups fresh spinach leaves, packed
  • 1 cup fresh basil leaves
  • ½ cup fresh parsley leaves
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup vegetable broth or chicken broth
  • ½ cup grated Parmesan cheese (or vegan alternative)
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste
  • 1 tablespoon pine nuts (optional)
  • 1 tablespoon red pepper flakes (optional, for added spice)
  • 1 tablespoon almond butter or cashew butter (optional for creaminess)

Instructions

Prepare the Greens:

  1. Blanch the Greens: In a large pot of boiling water, blanch the spinach, basil, and parsley for 1-2 minutes until just wilted. Remove from the pot and immediately transfer the greens to a bowl of ice water to stop the cooking process.
  2. Drain and Squeeze: Once the greens are cooled, drain them and squeeze out excess water. Set aside.

Cook the Garlic:

  1. Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant and golden brown, but be careful not to burn it.

Blend the Sauce:

  1. Blend the Greens: In a blender or food processor, add the blanched greens, sautéed garlic, and vegetable broth. Blend until smooth and creamy. If the sauce is too thick, add more broth, a tablespoon at a time, until you reach the desired consistency.
  2. Season the Sauce: Add the Parmesan cheese, lemon juice, salt, and pepper to the blender and pulse to combine. Taste and adjust seasoning as needed. If you want a creamier texture, add almond or cashew butter and blend again.

Simmer and Serve:

  1. Simmer the Sauce: Pour the green sauce into the skillet and heat over low-medium heat for 5-7 minutes, stirring occasionally. This allows the flavors to meld together.
  2. Serve: Toss the sauce with your favorite cooked pasta, making sure the pasta is well-coated. Serve with extra Parmesan cheese and a drizzle of olive oil if desired.
