Grilled Chicken Three-Cheese Sandwich Recipe

For the Sandwich:

  • 2 large chicken breasts
  • 1 teaspoon olive oil
  • Salt and pepper, to taste
  • 8 slices of bread (your choice: sourdough, whole wheat, etc.)
  • 4 slices of provolone cheese
  • 4 slices of cheddar cheese
  • 4 slices of mozzarella cheese
  • 4 tablespoons butter (for grilling)

Instructions

Prepare the Chicken

  • Season the chicken breasts with olive oil, salt, and pepper. Heat a grill or skillet over medium-high heat.

Grill the Chicken

  • Grill the chicken for 6-7 minutes per side or until fully cooked and juices run clear. Remove from heat and let rest.

Slice the Chicken

  • Once the chicken is cool enough to handle, slice it into thin strips.

Assemble the Sandwich

  • On one slice of bread, layer a slice of provolone cheese, followed by a portion of grilled chicken, a slice of cheddar cheese, another portion of chicken, and a slice of mozzarella cheese. Top with another slice of bread.

Butter the Bread

  • Spread 1 tablespoon of butter on the outside of each sandwich.

Grill the Sandwiches

  • Heat a skillet over medium heat and place the sandwich in the skillet, cooking until golden brown, about 3-4 minutes. Flip and repeat on the other side until the cheese is melted.

Serve and Enjoy

  • Remove the sandwich from the skillet, slice in half, and serve hot.
