8 slices of bread (your choice: sourdough, whole wheat, etc.)
4 slices of provolone cheese
4 slices of cheddar cheese
4 slices of mozzarella cheese
4 tablespoons butter (for grilling)
Instructions
Prepare the Chicken
Season the chicken breasts with olive oil, salt, and pepper. Heat a grill or skillet over medium-high heat.
Grill the Chicken
Grill the chicken for 6-7 minutes per side or until fully cooked and juices run clear. Remove from heat and let rest.
Slice the Chicken
Once the chicken is cool enough to handle, slice it into thin strips.
Assemble the Sandwich
On one slice of bread, layer a slice of provolone cheese, followed by a portion of grilled chicken, a slice of cheddar cheese, another portion of chicken, and a slice of mozzarella cheese. Top with another slice of bread.
Butter the Bread
Spread 1 tablespoon of butter on the outside of each sandwich.
Grill the Sandwiches
Heat a skillet over medium heat and place the sandwich in the skillet, cooking until golden brown, about 3-4 minutes. Flip and repeat on the other side until the cheese is melted.
Serve and Enjoy
Remove the sandwich from the skillet, slice in half, and serve hot.
