Ingredients

Scale

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika

For the Pepperoncini Garlic Butter:

  • ½ cup unsalted butter, softened
  • 1 jar (16 oz) pepperoncini peppers, drained and chopped (reserve a few peppers for garnish)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley, chopped (optional)
  • Salt, to taste

Instructions

Prepare the Chicken:

  1. Season the Chicken: Pat the chicken breasts dry with paper towels. Rub them with olive oil, then season generously with salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. Preheat the Grill: Heat your grill to medium-high heat. If using a grill pan, preheat it over medium-high heat as well.
  3. Grill the Chicken: Place the chicken on the grill and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked.
  4. Rest the Chicken: Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving. This helps the juices redistribute and keeps the chicken moist.

Make the Pepperoncini Garlic Butter:

  1. Melt the Butter: In a small saucepan, melt the unsalted butter over low heat.
  2. Add Garlic and Pepperoncini: Once the butter has melted, add the minced garlic and chopped pepperoncini peppers to the pan. Cook for 2-3 minutes, stirring occasionally, until the garlic becomes fragrant and soft.
  3. Season the Butter: Stir in the lemon juice, oregano, and salt to taste. If desired, you can also add fresh parsley for a pop of color and freshness.
  4. Simmer the Butter: Allow the butter to simmer for another 1-2 minutes to let the flavors meld together.

Assemble and Serve:

  1. Serve the Chicken: Place the grilled chicken on a serving platter or individual plates. Spoon the pepperoncini garlic butter over the chicken breasts, making sure to coat them generously.
  2. Garnish: For an extra burst of flavor, garnish with additional chopped pepperoncini peppers and fresh parsley.
