Instructions

Prepare the Cupcakes:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream the Butter and Honey: In a large mixing bowl, cream together the softened butter and honey using an electric mixer until light and fluffy.
  4. Add the Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract, mixing until fully incorporated.
  5. Alternate Dry Ingredients and Buttermilk: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined—do not overmix.
  6. Fill the Cupcake Liners: Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.
  7. Bake the Cupcakes: Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Prepare the Mascarpone Frosting:
