Instructions

Sauté the Vegetables:

  1. Heat the Olive Oil: In a large pot or Dutch oven, heat the olive oil over medium heat.

  2. Sauté the Onion, Carrots, and Celery: Add the chopped onion, carrots, and celery to the pot. Sauté for about 5-7 minutes, or until the onion is translucent and the vegetables are slightly softened.

  3. Add the Garlic: Add the minced garlic to the pot and sauté for about 1 minute more, or until fragrant. Be careful not to burn the garlic.

Add the Broth and Vegetables:

  1. Pour in the Broth: Pour the vegetable broth (or chicken broth) into the pot.

  2. Add the Root Vegetables: Add the diced potatoes, turnip, and parsnip to the pot.
