Ingredients

Scale

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons jerk seasoning (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice

For the Rice:

  • 1 cup jasmine rice (or your preferred rice)
  • 1 ½ cups water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 cup fresh pineapple, diced
  • ½ cup fresh basil leaves, chopped
  • 1 tablespoon lime juice
  • 1 tablespoon soy sauce (or tamari for gluten-free)

Instructions

Prepare the Shrimp:

  1. Marinate the Shrimp: In a bowl, toss the shrimp with the jerk seasoning, olive oil, and lime juice. Let it marinate for about 10 minutes to allow the flavors to develop.
  2. Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp to the pan and cook for 2-3 minutes per side, until the shrimp are opaque and cooked through. Remove from heat and set aside.

Prepare the Rice:

  1. Cook the Rice: In a medium saucepan, combine the jasmine rice, water, olive oil, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-18 minutes, or until the rice is tender and the water has been absorbed.
  2. Prepare the Pineapple and Basil: While the rice is cooking, chop the fresh pineapple into small, bite-sized pieces. Chop the fresh basil leaves and set both aside.

Assemble the Dish:

  1. Combine the Rice and Pineapple: Once the rice is cooked, fluff it with a fork and gently stir in the fresh pineapple, lime juice, soy sauce, and chopped basil. The warm rice will help the pineapple soften slightly and release its juices into the rice.
  2. Add the Shrimp: Serve the jerk shrimp on top of the pineapple basil rice, arranging them neatly to showcase the vibrant shrimp.

Garnish and Serve:

  1. Garnish: Garnish the dish with additional fresh basil leaves and lime wedges on the side for extra flavor and visual appeal.
  2. Serve: Serve the dish warm with a side of your choice, such as a crisp green salad or some grilled vegetables.
